Cook #withme #stayhome - Join Molly Baz in the Bon Appétit Test Kitchen as she makes roast chicken and potatoes. This isn’t the crisp-skinned, high-heat roast chicken you’re probably familiar with. Instead, it’s a melt-in-your-mouth tender, schmaltzy, slow-roast version that’s more similar to rotisserie chicken-except (bonus!) it gets slathered in the funky-spicy-sweet gochujang. And while the meat might be the star of the show, don't discount those buttery-soft, nearly-confited potatoes, which cook gently in the chicken fat. Makes you wonder why you haven't always been roasting long-cooking vegetables-carrots, cauliflower, turnips (?!), winter squash, fennel-under the bird for a built-in side, huh?

I made this today, and no joke. It was amazing! The only thing is that I put the chicken breast side up for 30 min. Then flipped it over for the remaining 1.5 hrs at 180 Celsius.

I don't know much about Sohla, but seems like she does not know how to give a compliment, or even describe a taste properly. When a really bad barbecue sauce is all grown up, what does that mean? Plus there is no way gochujang tastes like KC masterpiece. My instinct is that this recipe uses too much gochujang, so gets an overly perfume taste. It traditional Korean cooking, you add gochugaru (chili flakes) to amp up the heat and flavor, and then use sesame oil to add complexity. Using gochujang without gochugaru and sesame oil likely makes the dish taste off-balance.

Not hating Sohla but there is something about her and her way of giving opinions about the other chefs dishes. I know she helps them a lot especially in tempering chocolate 😂. It's like she has a way of making them feel stupid or something while looking completely innocent and friendly.

i've actually made this 4 times in the past week! i've just used chicken leg pieces rather than a whole chicken and it cooks in about 30 mins. such a nice meal for low cost. mixing the oil with the paste is something that i didn't think about before. it makes sense because the paste on its own would just burn

It’s obvious Sohla was trying to be nice and I trust her taste a little bit more than Molly’s. This is the first BA video recipe I have no desire to make. Gochujang is a condiment; using it as an ingredient in a sauce is fine but making it your main source of flavor is going to be too sweet and one-note and overpower any of the subtler flavors in the dish - which indeed is exactly what a commercial barbecue sauce does. There’s a reason real barbecue uses dry rub, not sauce. The reason a lot of Americans started using barbecue sauce while cooking meat and poultry was to salvage cheaper and lower-quality meat or mask having to overcook older meat in order to get rid of pathogens. This recipe is a very American use of a Korean ingredient. And speaking of pathogens: Molly is not modeling good hygiene in her handling of raw chicken, which is particularly galling to those watching this under quarantine.

It would be nice if the ingredients are listed all at the beginning instead of one at a time or having to go to another website. I had zero idea what gochujang was and she doesn't explain right off the bat what the flavor profile is or what cuisine.
