Presented by Method | Join Molly Baz in the Bon Appétit Test Kitchen as she makes classic chicken noodle soup. There are tons of shortcuts for chicken noodle soup, but this time we're not cutting corners-this is the long game! This version is about as classic (and as comforting) as they come, using a whole chicken-bones, skin, and all-to lend flavor and body to the broth. The key is to treat the breasts and legs differently: The breasts need to be pulled early so they don't overcook and dry out, whereas the legs require a long simmer to become incredibly tender. We used ditalini here, but feel free to use any small quick-cooking pasta you have! We wouldn’t be mad about orzo or ABCs either.

Always cook pasta or dumplings separate never in soup, but pasta omg you can do better, pressure pot is minutes and you dont have to spend cooking one soup so long and its nice clear :)

Cook the whole thing in an Instant Pot. Works just as well in a fraction of the time. (And egg noodles can cook just the way she's cooking whatever pasta she's cooking there. They also cook quickly.)

i think cooling and carving a 1/2 cooked chicken is redunkulous. What's the benefit of boiling a whole bird? Break it down before you start and remove the breast meat at 155-20 minutes saved. you're welcome

The one thing I would do differently is break down the chicken first, so that way it is easier to remove the different parts without having to remove the whole chicken multiple times. Also, the exposed bone cuts will add SO MUCH MORE FLAVOR!

Is the METHOD ad the reason why Molly hasn't tied her hair together? Just good that this video is titled "Molly makes...." and not "Pro Chef makes...." like in her other videos because a REAL PRO CHEF would have tied their hair before entering the kitchen (like all the staff behind her) instead of tossing/stroking it out of her face all the time - it's called HYGIENE!

This is the BEST method for cooking chicken for soup. I save most of the breast for putting on salads or making chicken salad because it is so moist. She tosses the carcass but I usually pick more meat off of it and use mostly dark meat in the soup with a little white. We don't put any pasta in it and it is still delicious. The onion peels give it such a wonderful color. After viewing a few times I never heard any mention of how long it takes for the breast to reach 155 degrees but after a few tries it seems to be between 25 - 35 minutes depending on how big the chicken is. My husband loves the soup and the moist breast meat in salads.

The carrots and celery will take longer than 4 or 5 minutes to become tender. Other than that, this looks like an awesome recipe.

I had previously watched Carla's spatchcocked chicken and the video was great, the chicken looked amazing and I found myself to suddenly be soooo hungry, but also very tired since I hadn't been able to sleep well all night. Then this video. The almost monotone delivery, and overcomplicated recipe... Perfect! Thank you for helping me with my insomnia.

Been making chicken soup every week for 20 years for Shabbat and never had dry chicken in my soup or veggies with peels and my liquid is golden! This method is way too time consuming and unnecessary Molly.

I love this show but I have one problem with it, too much waste. I see every cook toss all the veggie scraps,....onion ends, parsley stems, carrot peels, etc which would make wonderful vegetable stock. I would trim off the dirty roots of mushrooms, onions, garlic... I would have used the tough ends of the celery for the stock, then be left with just the tender upper parts for the soup. I'd also roast the chicken first , in pieces, and break up the bones, for added flavor. The veg in the soup may be used up but the garlic is wasted. And the bones still had plenty of meat on it, wings, back, etc,.... more waste. - A tip - Bring chicken to stove, then add 14 cups water. Remove the chicken only to a bowl and leave scalding hot pot of soup on stove. ( Before someone falls Bon Appetit) Bring back the bones, skin and meat in bowl to be cooked.

Am I the only person who watches them throw away all the "lifeless" chicken and vegetables and think what a waste it is? Toss some mayonnaise and seasoning on some of that and you've got a killer chicken salad.... Asian moms everywhere are passing serious judgement.
