Nice sharpening video, complete and correct (except using a 10K grit stone. If you want a sharp knife, you only need to go up to 3 or 5K grit stone max. You really don't want or need a razor's edge because that edge won't last long.). Yes, hone and maintain your knives. In reality based on the amount of use a knife gets; you only need to sharpen a knife 2 to 3 times a year. But again, a good sharpening video.

Sharpen once, strop forever. I use my knives and I strop it after every use. I never have a problem with having a sharp knife.

Bon Appétit This should be required viewing for anyone who drags a knife heavily through the spinning stone on the back of an electric can opener while sparks fly and metal disappears.

Honing has its purpose and it’s a good idea to hone between sharpening sessions. When honing seems to fail to sufficiently reset the edge, then it’s time to resharpen. Japanese wet stones are great. They really should be kept flat, you can purchase larger lapping plates designed to flatten a wet stone. Another way is with a granite surface plate and lapping film. Woodcraft sells them in three sizes for very reasonable prices. They also sell lapping film. Soak the stone in water for standard number of minutes and your wet stone will be as flat as your granite. No need for lab grade super flat granite which you might find in a casual search, those will be very pricey. Truth is, you can also sharpen the knife using the granite surface plate and lapping film which comes in grits up to 50,000. 3M makes a popular lapping film. They are likely to have a peel off back with adhesive. Woodcraft has a good selection as does Lee Valley, these are more wood working supply stores though both likely sell knives, Woodcraft owns Japan Woodworker and last o checked, they had a very large selection of kitchen knives. Cheers.

Tbh, it all depends on the blade and metal used, unless you use a knife that's made out of steel that's above 58HRC it's pointless to go above 6000 grit.

I've been curious, and never found a good answer... when using a honing steel, which direction should you go? Blade cutting edge toward the back, or back toward the cutting edge?

Holy sh*t, so i sharpened my new knife on my new whetstone, and i was disappointed that i couldnt get to the razor sharp i wanted. So i did what you said and stropped it on a leather belt, and now its screaming sharp.

for a very long time i was silently complaining why "sharpening knives" in general is just focused on kitchen knives because there's even tools that fit over a sink, until i realize we don't....normally really use knives outside of cooking...
