Join Andy Baraghani in the Bon Appétit Test Kitchen as he makes pasta with tomatoes and chickpeas. If you don't have a can of tomatoes, tomato paste will work just fine. Cook a couple of tablespoons in a small skillet alongside the chickpeas until it darkens before adding to the chickpeas and proceeding with the recipe.

Holy cow .... Not even a simple thing like pasta and chickpeas are you able to do .... Just zero. Nothing, nothing. You have the incredible ability to RUIN and mangler any recipe. Porca vacca.... This recipe is so good that I make it at least once a week, even as someone who isn't a huge fan of chickpeas. I would recommend using a can of crushed tomatoes opposed to peeled, as the flavor is much stronger.

I made this with what I had on hand...subbing heaping 1/4tsp crushed dried rosemary and 1 cup good pomodoro sauce (Wegman's Grandma's Pomodoro, it's the best). Wow. Yum! I could eat this every day. It does remind me of a grown up version of Spaghetti O's, even though I've never been a huge fan. It's like what Spaghetti O's wishes it could be, healthy and satisfying but soooo delicious!

Just made it. I think this is the first online recipe that I made (95%) exactly as instructed and it turned out to be awesome! Usually everything is super bland and I have to season a lot, but this is a really nice and simple recipe. One thing, we are not the kind of people who eat much in one sitting, but this was devoured by the two of us easily. Although we were really hungry (and Hungarian for that matter). Thank you Andy!

If using fresh pasta, by how much would you recommend reducing the water? I'm thinking of using all the tomatoes and using maybe 3 cups water since fresh pasta takes less time to cook.

I'd love it if you guys got a dedicated vegan chef. There's a big movement towards eating less animal products without sacrificing flavour and enjoyment of food. So much stuff out there is geared towards people who are vegan for their health and not enough that's just tasty. I love your channel and I love cooking, but being vegan myself I can't make most of the dishes

mezzi rigatoni is a short pasta that is widely seen. don't get to arthur avenue much. bust up lasagna sheets- impress someone who doesn't have anything "in the house." a lot can be accomplished with one medium onion and two or three cloves of garlic. using the green shaker of "parmesan" would be tragic, and you'd wanna avoid salt because it's half salt. garbonzo brine has a vaguely saline thing. neato. ..on the cheap, except for the authentic reggiano.
